Easter treats are a feast for the eyes and the taste buds. These cakesicles and cake pops combine playful designs with sweet flavors to brighten any spring celebration.

Why These Easter Treats Are Perfect for Spring Celebrations

  • Adorable bunny and chick designs add a festive touch to dessert tables.
  • Bright pastel decorations capture the essence of spring and renewal.
  • Perfect as gifts or party favors for Easter gatherings.

Ingredients You’ll Need

  • 1 box vanilla cake mix
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 cup water
  • 1/2 cup butter, softened
  • 2 cups powdered sugar
  • 4 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1 cup white chocolate chips
  • Pink, yellow, and green food coloring
  • Sprinkles (e.g., pastel colors, flowers, bunny shapes)
  • Lollipop sticks or cakesicle sticks
  • Candy eyes
  • Pastel colored fondant (optional for decorations)

Step-by-Step Guide to Making These Easter Treats

Preheat your oven to 350°F (175°C) and grease a 9×13 inch cake pan. Mix the vanilla cake mix, eggs, vegetable oil, and water in a large bowl until smooth, then pour the batter into the pan.

Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely in the pan before transferring it to a wire rack.

Crumble the cooled cake into fine crumbs using your hands and place them in a large bowl. Beat the butter, powdered sugar, milk, and vanilla extract in a separate bowl to make a smooth buttercream.

Combine the buttercream with the cake crumbs, mixing until the texture is moist and holds its shape. Shape portions of the mixture into oval or round balls for cake pops or pack them into cakesicle molds for a more structured look.

Freeze the molds for at least 30 minutes to help them set. Melt the white chocolate chips in a microwave-safe bowl, stirring every 30 seconds until smooth.

Divide the melted chocolate into bowls and add pink, yellow, and green food coloring if desired. Dip the end of each stick into the chocolate, then insert it into the formed cake pops or cakesicles.

Coat the pops or cakesicles in the colored chocolate, covering them completely. Decorate immediately with sprinkles, candy eyes, or fondant flowers for a festive Easter theme.

Ingredient Swaps You Can Try

Substitute chocolate cake mix for vanilla if you prefer a richer flavor. Use dark chocolate chips instead of white chocolate for coating to create a different aesthetic.

How to Store and Enjoy Leftovers

Store completed cakesicles and cake pops in an airtight container in the fridge for up to 5 days. To enjoy later, let them sit at room temperature for 15 minutes before serving.
