Ingredients
  

  • 8 ounces pasta (penne or fettuccine)
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste
  • fresh parsley, chopped for garnish

Method
 

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chicken pieces and season with salt and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  3. Add the minced garlic to the skillet and sauté for an additional 1-2 minutes until fragrant.
  4. Pour in the heavy cream and stir to combine. Bring to a gentle simmer.
  5. Stir in the grated Parmesan cheese and Italian seasoning. Mix until the cheese is melted and the sauce is creamy.
  6. Add the cooked pasta to the skillet and toss to coat the pasta evenly in the sauce.
  7. Taste and adjust seasoning if necessary. Garnish with fresh parsley before serving.

Notes

For a lighter version, you can use half-and-half instead of heavy cream.
