Ingredients
  

  • 8 oz penne pasta
  • 1 lb smoked sausage sliced
  • 1 tbsp olive oil
  • 1 small onion diced
  • 3 clove garlic minced
  • 1 medium bell pepper diced
  • 1 can diced tomatoes 14.5 oz, undrained
  • 1 cup heavy cream
  • 2 tsp Cajun seasoning
  • 1 tsp paprika
  • salt to taste
  • pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 2 green onions sliced (for garnish)

Method
 

  1. Cook the penne pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes.
  3. Add the diced onion and bell pepper to the skillet, cooking until softened, about 3-4 minutes.
  4. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  5. Pour in the diced tomatoes with their juices, heavy cream, Cajun seasoning, and paprika. Stir well to combine.
  6. Let the mixture simmer for about 5 minutes, allowing it to thicken slightly. Season with salt and pepper to taste.
  7. Add the cooked penne pasta to the skillet, tossing to coat the pasta in the sauce.
  8. Stir in the grated Parmesan cheese until melted and creamy.
  9. Serve hot, garnished with sliced green onions.

Notes

Feel free to adjust the spice level by adding more or less Cajun seasoning.
