Easy One-Pan Honey Garlic Kielbasa & Veggies

Ingredients
  

  • 1 package smoked kielbasa (13-14 ounce), cut into 1/2-inch thick rounds
  • 1 head broccoli cut into bite-sized florets
  • 1 red bell pepper cored and chopped into 1-inch pieces
  • 1 yellow bell pepper cored and chopped into 1-inch pieces
  • 1/2 red onion cut into wedges
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the Honey Garlic Sauce
  • 1/4 cup honey
  • 2 tablespoons low-sodium soy sauce
  • 3 cloves garlic minced
  • 1 teaspoon grated fresh ginger (optional)
  • fresh parsley chopped, for garnish (optional)

Method
 

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, combine the sliced kielbasa, broccoli florets, red bell pepper, yellow bell pepper, and red onion wedges. Drizzle with olive oil, sprinkle with salt and black pepper, and toss until all ingredients are evenly coated.
  3. Spread the kielbasa and vegetable mixture in a single layer on the prepared baking sheet.
  4. Roast in the preheated oven for 15 minutes.
  5. While the kielbasa and vegetables are roasting, prepare the honey garlic sauce: In a small bowl, whisk together the honey, soy sauce, minced garlic, and grated ginger (if using) until well combined.
  6. After 15 minutes, remove the baking sheet from the oven. Pour the honey garlic sauce evenly over the kielbasa and vegetables. Toss gently on the baking sheet to ensure everything is well coated.
  7. Return the baking sheet to the oven and continue to roast for another 10-15 minutes, or until the vegetables are tender-crisp and the sauce has thickened and caramelized slightly.
  8. Remove from the oven and serve immediately, optionally garnished with fresh chopped parsley.

Notes

For an extra kick, add a pinch of red pepper flakes to the honey garlic sauce. You can easily customize the vegetables based on what you have on hand; green beans, zucchini, or even potatoes (cut smaller for faster cooking) would work well.
