- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the diced sweet potatoes with olive oil, paprika, salt, and pepper. Toss until well coated.
- Spread the sweet potatoes on a baking sheet in a single layer. Bake in the preheated oven for 15 minutes.
- While the sweet potatoes are baking, prepare the honey garlic sauce by mixing honey, minced garlic, soy sauce, salt, and pepper in a small bowl.
- After 15 minutes, remove the baking sheet from the oven and push the sweet potatoes to one side.
- Place the chicken thighs on the baking sheet and brush them generously with the honey garlic sauce.
- Return the baking sheet to the oven and bake for an additional 20-25 minutes, or until the chicken is cooked through and the sweet potatoes are tender.
- Once cooked, remove from the oven and let rest for 5 minutes.
- Garnish with chopped fresh parsley before serving.
Notes
For extra flavor, marinate the chicken in the honey garlic sauce for a few hours before cooking.
