Ingredients
  

  • 4 boneless, skinless chicken thighs
  • 2 medium sweet potatoes peeled and diced
  • 3 tbsp honey
  • 3 clove garlic minced
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 1 tsp ground paprika
  • salt to taste
  • pepper to taste
  • fresh parsley chopped (for garnish)

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the diced sweet potatoes with olive oil, paprika, salt, and pepper. Toss until well coated.
  3. Spread the sweet potatoes on a baking sheet in a single layer. Bake in the preheated oven for 15 minutes.
  4. While the sweet potatoes are baking, prepare the honey garlic sauce by mixing honey, minced garlic, soy sauce, salt, and pepper in a small bowl.
  5. After 15 minutes, remove the baking sheet from the oven and push the sweet potatoes to one side.
  6. Place the chicken thighs on the baking sheet and brush them generously with the honey garlic sauce.
  7. Return the baking sheet to the oven and bake for an additional 20-25 minutes, or until the chicken is cooked through and the sweet potatoes are tender.
  8. Once cooked, remove from the oven and let rest for 5 minutes.
  9. Garnish with chopped fresh parsley before serving.

Notes

For extra flavor, marinate the chicken in the honey garlic sauce for a few hours before cooking.
