- Heat olive oil in a large pot or Dutch oven over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Pour in vegetable broth and bring to a boil. Add the broken spaghetti or linguine.
- Reduce heat to medium-low, cover, and simmer for 10-12 minutes, stirring occasionally, until pasta is al dente and most of the liquid has been absorbed.
- Stir in heavy cream, grated Parmesan cheese, and chopped fresh parsley. Cook for another 2-3 minutes, stirring constantly, until the sauce thickens.
- Season with salt and black pepper to taste. Serve immediately.
Notes
For a richer flavor, you can use chicken broth instead of vegetable broth. Add some red pepper flakes for a bit of heat if you like a spicy kick.
