One Pot Creamy Garlic Pasta

This incredibly easy one-pot creamy garlic pasta is perfect for a quick weeknight dinner. It's packed with rich garlic flavor and comes together with minimal cleanup.

Ingredients
  

  • 1 tbsp olive oil
  • 4 cloves garlic minced
  • 4 cup vegetable broth
  • 12 oz spaghetti or linguine broken in half
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley chopped
  • salt and black pepper to taste

Method
 

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  2. Pour in vegetable broth and bring to a boil. Add the broken spaghetti or linguine.
  3. Reduce heat to medium-low, cover, and simmer for 10-12 minutes, stirring occasionally, until pasta is al dente and most of the liquid has been absorbed.
  4. Stir in heavy cream, grated Parmesan cheese, and chopped fresh parsley. Cook for another 2-3 minutes, stirring constantly, until the sauce thickens.
  5. Season with salt and black pepper to taste. Serve immediately.

Notes

For a richer flavor, you can use chicken broth instead of vegetable broth. Add some red pepper flakes for a bit of heat if you like a spicy kick.
