Ingredients
  

  • 4 boneless, skinless chicken breasts (about 1.5 - 2 lbs total)
  • 1 packet dry ranch seasoning mix (1 oz)
  • 2 tablespoons olive oil
  • 1/2 cup chicken broth (or water)
  • fresh parsley, chopped for garnish (optional)
  • salt and black pepper to taste

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Pat chicken breasts dry with paper towels. Season lightly with salt and pepper on both sides.
  3. Sprinkle the dry ranch seasoning mix evenly over both sides of the chicken breasts, pressing gently to adhere.
  4. Heat olive oil in a large oven-safe skillet (cast iron works well) over medium-high heat.
  5. Sear chicken breasts for 3-4 minutes per side until golden brown.
  6. Pour chicken broth around the chicken breasts in the skillet.
  7. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
  8. Remove from oven, tent with foil, and let rest for 5 minutes before slicing or serving.
  9. Garnish with fresh chopped parsley, if desired, and serve warm.

Notes

For extra flavor, marinate the chicken in a little buttermilk before seasoning. Serve with mashed potatoes, rice, or a side salad.
