Ingredients
  

  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 2 tablespoons honey
  • 3 cloves garlic minced
  • 2 tablespoons soy sauce low sodium preferred
  • 1 tablespoon olive oil
  • 1 teaspoon fresh ginger minced (optional)
  • salt to taste
  • pepper to taste
  • 2 cups cooked brown rice
  • 1 cup broccoli florets optional, for serving
  • sesame seeds for garnish (optional)
  • chopped green onions for garnish (optional)

Method
 

  1. In a small bowl, mix together honey, minced garlic, soy sauce, and olive oil. If using, add minced ginger for extra flavor.
  2. In a large bowl, season the chicken pieces with salt and pepper. Pour the honey garlic mixture over the chicken and toss to coat evenly.
  3. Heat a large skillet over medium heat and add the marinated chicken pieces in a single layer. Cook for about 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through.
  4. If using, add broccoli florets to the skillet during the last few minutes of cooking to steam them slightly.
  5. Serve the honey garlic chicken bites over a bed of cooked brown rice, and garnish with sesame seeds and chopped green onions if desired.

Notes

For a spicier kick, consider adding red pepper flakes to the marinade.
